Coquina focuses on seasonal and local ingredients. During the summer, Lynn (chef) has been going to the market every week and changing some of the elements of their menu frequently. As the seasons change so does their menu. This allows for more creativity for Lynn and a variety for their diners.
About the owners, Lynn & Daniel Flattley:
We ran the Wild Rose Bistro in Bandon for the last seven years and have had a very supportive following from Ashland and the surrounding area who have followed us here. We opened Coquina on New Years Eve of 2010. Coquina means “to cook” in late latin. We like that it might be hard to place the name’s origin as Lynn’s food includes a variety of ethnic cuisines and techniques. Though I have been a chef by trade for nearly ten years I have run the dining room since our restaurant in Bandon. We are happy to be here and have been enjoying our first summer in Ashland and what it has to offer. We are open 5 until closing every night except Mondays during the summer and plan to open our patio area this week.
